This is the third vintage of A Tribute to grace Rosé, and hails from the same block of Clone 2 Grenache as last year’s Rosé: block ‘K’ of the Santa Barbara Highlands Vineyard. The fruit ripened a whole 5 weeks earlier than in 2013; a result of the third drought year. The intensity brought by little rainfall is harnessed beautifully by picking for Rosé ~ as the characters of the fruit (nectarine blossom, stone-fruit, anise) translate perfectly into the finished wine.
I gently foot tread the 6.33 tons of whole clusters, and they rested on their skins for 24 hours before being gently pressed, to maximize colour imparting. This clone of Grenache (2) is known for its pale hue, and an added day of skin contact increases both colour and texture.
Fermentation occurred in the tank named Full Of Grace, at a resting temperature of 50’F to ensure freshness. I decided to resist secondary fermentation to keep the wine’s delicate aromatics and crisp finish ~ and she aged in a combination of porter-tank and stainless barrels.
This wine was bottled on Grace’s 93rd birthday: February 16, 2015.
