This Sauvignon Blanc is from the same vineyard source I use for the Twenty Five Reasons. Over 40 years old and farmed organically. 50% was fermented on the skins for 1 month. The other half was fermented as whole clusters for 45 days. They were then slowly aged in 500 Liter acacia barrels for 32 months before bottling. The only addition was that of sulfur as antioxidant.
Skin contact and long aging do not necessarily mean “orange wine”. This wine is more golden yellow and speaks more of Muscadet than Friuli. Fresh apples unripe stone fruit and lemon thyme while talc fades into oyster shells and salinity.
